Americans are eating more cheese than ever before, with consumption reaching record levels. In fact, per capita cheese consumption has hit an all-time high of 42 pounds, doubling the figure from 1975. This trend stands in contrast to milk consumption, which has declined 47 percent since 1975.

Cheese's enduring popularity can be attributed to several factors. Its artisanal appeal continues to grow, appealing to food enthusiasts and connoisseurs. Additionally, cheese's high protein content makes it attractive to health-conscious consumers. Perhaps most importantly, cheese remains a key ingredient in many favourite foods, cementing its place in the American diet.
When it comes to cheese preferences, mozzarella takes the top spot as the most consumed cheese in the US, followed closely by cheddar. This popularity isn't just confined to domestic consumption – the US has also become a major player in the global cheese market. Exports are expected to rise by 17 percent from 2023 to 2024, reaching 507,000 tonnes.

Interestingly, despite the increased consumption and rising exports, the US still maintains substantial cheese stockpiles. As of August 2024, about 1.4 billion pounds of cheese were being held in cold storage across the country. This large inventory suggests that the cheese industry is well-positioned to meet both domestic and international demand for the foreseeable future.
